Danny Meyer is a man that likes sustainability… and good PR. So, it’s no surprise that the politico turned restaurant mogul is partnering with eco-darling brewery Toast. Meyer’s Shake Shack empire is set to begin offering cans Toast American pale ale, a beer made from excess bread as first reported by AM New York.
Toast and their sister non-profit, Feedback are the do-good brainchild of Tristram Stuart. Their beer “is brewed with unsold loaves from bakeries and unused crusts from sandwich makers,” explains the company’s website. “The only other ingredients are hops, yeast and water.” 100% of Toast’s profits go to Feedback which strives to eliminate food waste.
Although the brewer’s roots are in the UK, Shake Shack’s beer will come from much a closer source. The leftover bread will be sourced from Upstate NY’s Breads Alone Bakery and the ale will be brewed under contract by an unspecified brewer in the region (F.X. Matt?) AM reports that the ratio will be about one slice of bread per can of beer.
The official tasting notes on the ale describe a golden flavor with hints of caramel and citrus. So, basically, it sounds like a pale ale.
“We love partnering with suppliers who support a mission of sustainability,” Jeff Amoscato, Shake Shack’s vice president of supply chain and menu innovation, told AM. “Toast is seeking to better the industry by fighting food waste. Not to mention, Toast Ale is delicious!
Meyer has a pretty solid history of doing the right thing. The company already donates 5% of profits to charity. In addition, Shake Shack has been proactive in waste reduction and boasts a composting program.
