In Vegas, they like to do things over the top. When it came time for LA based brothers Mark and Jonnie Houston to plan for guest bartenders at their first Vegas bar, On The Record Bar at the Park MGM, the pair eschewed concepts like a pop-up or a takeover. Instead they enlisted the top star tenders in the country in an ongoing “Bartender-In-residence” program.
After a decade of attaining accolades for a dozen LA establishments including Harvard & Stone, Piano Bar, and Good Times at Davey Wayne’s, the duo are well connected to say the least. Their wide reach is reflected in the impressive roster of guest bartenders slated to make the pilgrimage to their Sin City location.
The Houstons’ ambitious ‘Bartenders-in-Residency’ program has already booked guest shifts featuring Jillian Vose (Dead Rabbit, NYC), Alex Day and David Kaplan (Death & Co, NYC), Jim Meehan (PDT, NYC), Pamela Wiznitzer (Henry at the Life Hotel, NYC), Ivy Mix (Leyenda, NYC), Erick Castro (Polite Provisions, San Diego), Kevin Dietrich (P.C.H., San Francisco), Ryan Fitzgerald (ABV, San Francisco), Josh Harris (The Bon Vivants, San Francisco), Simon Ford (Fords Gin), Aaron Polsky (Harvard and Stone, Los Angeles), Leo Robitschek (NoMad, Las Vegas), Daniel Marohnic (Corner Bar Management, Las Vegas) and Tony Abou-Ganim (Las Vegas).
“These are the rock stars of the cocktail world,” said Craig Schoettler, Corporate Mixologist, MGM Resorts International. “Interacting directly with guests in such an intimate space, these top beverage professionals will help create an elevated and entertaining cocktail experience that you won’t find anywhere else in the world.”
The bold-faced bartenders will hold court in a 25 seat room within On The Record. Dubbed the Vinyl Parlor, the decor revolves around, you guessed it, album covers.
There will be lots of Dealer’s Choices or as the press materials phrase it, bartenders will “riff to concoct a unique cocktail to cater to a guest’s personal palate or mood.”
In addition, each bartender will create their own song inspired drinks which will be added to the seasonal menus. The Talking Heads seem to be a popular theme.
On Jan. 11 and 12, Castro will debut his “Road to Nowhere” cocktail (Commerce Gin, lemon juice, pineapple juice, yellow Chartreuese, honey syrup, orange bitters and a couple dashes of Absinthe.) The following week, Jillian Vose will opt for the band’s Artistic roots with the 77 hit “Psycho Killer” (Redbreast 12-year-old Irish Whiskey, Absinthe, Campari, Giffard White Creme de Cacao and Giffard Banane.)
On The Record is scheduled to open on December 28 at the brand new casino resort. In addition to the Vinyl Parlor, the 11,000 square foot space will boast two other rooms. The entrance looks like a record store and within one will find a double-decker bus converted into a DJ Booth, hidden karaoke rooms, and lots of music memorabilia.
In true Vegas Club fashion, hours of operation will be Wednesday, Friday and Saturday nights from 10:30pm to 4:00am.
