Here is a tasty variation on the Vesper by Jonathan Pogash of The Cocktail Guru. The drink was commissioned Caorunn, a gin made with apples. So, Pogash choses to really emphasize the apple tastes bringing a refreshing brightness to the cocktail.

Apple Vesper
  1. Stir ingredients very well with ice.
  2. Strain over 1 large ice cube into a rocks glass.
  3. Garnish with a floating star anise and apple slice on rim of glass.
