Named to honor the famed upstate New York Race Course, here is an excellent variation on the Manhattan. A healthy ounce of cognac lends a fuller flavor and just a little bit more sweetness than the original.

  1. Combine rye, vermouth, and cognac in a mixing glass. Add ice.
  2. Stir.
  3. Hawthorne strain into a coupe.
  4. Add two dashes Angostura.
  5. Garnish with twist.
