  1. Build as a sour. Combine amaro, lemon juice, orgeat, egg white, and jam in a tin. Dry shake to emulsify.
  2. Add ice and wet shake to chill.
  3. Double strain into a coupe.
  4. Garnish by floating bitters on top.
